Is there a way to get the TrackIR to do head movement in Medal of Honour whilst continuing with the mouse to control the direction your body is facing (and therefore the direction you walk)?

Alas no. Few FPS games have seperate head and body angles (Operation Flashpoint is the only one that comes to mind). I don't know of any that have seperate head and body angles that work with TrackIR, even in mouse mode.
Shame, but hopefully a temporary problem. The TrackIR seems to be getting quite well known so support in other games may arrive. Op-FP2 hopefully

Yep, we are on that one. The ability to move your view seperately from your body is tops on our list. With the great support from our users I am sure we will get this to happen.
