I recently started flying a new plane; however, the Track IR software defaults to a view too close to the panel. Although I can move around and change it somewhat, when I press the center key I return to a view too close to the panel. I feel I need to be a little further back. How can I set the default distance.

That would have to do with the default pilot view of the plane. You need to adjust the plane's config file. That is something I cannot really help you with as I am not that good at doing it myself. I would reach out to AVSIM or SIMHQ for help.
