Hi, I am using the Natnet SDK Matlab sample to track head movement and want to output this data stream into a file. Could anyone point me in the right direction as to how best to accomplish this? I'm assuming I use the mocap data persistent variables in the UpdateUI plot, but am unsure how to make it work. Any help is appreciated, thanks.

Unfortunately, I have limited knowledge on Matlab.

Matlab provides some simple functions that write to file. If no one responds with more useful information, here, you may want to contact Matlab for this.
