It was somewhat unclear to me from the camera comparison if the s250e cameras can run their full resolution at 250 fps since the fps states "250-30fps adjustable". Are they capable of running at their full resolutions at this speed?

The S250e does support full resolution at 250 FPS, with the exception of MJPEG mode (which supports 120 FPS).
